Thank you for looking away from this drawn-out election long enough to read this post! I don’t know about you, but I have been SO DISTRACTED this week. It’s stressful not knowing, so I thought to myself: I deserve French Toast. And I think you deserve French Toast, too.
Ingredients:
4 slices bread (you can even go gluten free! This is a great one)
2 eggs (local free range chicken or duck eggs are ideal—they taste better!)
1/2 cup milk (if you’re dairy-free, I recommend using oat milk—it’s super creamy and rich and tastes like breakfast)
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
1 teaspoon vanilla extract
Salt to taste (I like using a few pinches of coarse sea salt)
Desired toppings: This week, I used some berry plum sauce a friend made for me and topped the toast with blackberries. I LOVE French Toast with a fruit sauce topping, but you can go classic with maple syrup, simple with honey, or lighthearted with whipped cream. This is a form of self care, after all :)
Steps:
Beat eggs, milk, spices, and vanilla in a bowl until smooth.
Heat a skillet and melt some butter or oil in the pan.
Dunk each bread slice in the mixture, coating both sides. I like to leave the bread soaking for about 30 seconds so it’s saturated.
Cook in the skillet until golden brown on both sides.
Serve with your desired topping.
Take a deep breath and enjoy.
